Lovely peasant dinner

Sometimes the easy stuff is brilliant...
I just looked at what we had at home and whipped up an italian peasant dinner....

Chop onion and garlic up - fry on low heat until transparent. Add chopped (good quality) bacon (trim off any fat so just pure meat) and stir. Add oregano and chili to taste. Season. Add tomato puree (a table spoon or bit more) throw in a can of chopped tomatoes. Stir. Add red wine (we quite like it so I glugged in a bit). Taste and add more herbs/spices if needed. Stir and let simmer until slightly reduced.

Whilst all of the above is happening, make sure your pasta is on so timed when sauce done.

Serve with good aged parmesan freshly grated, and fresh baguette to dip in sauce....

We never really eat any meal without a salad but this time we did and we missed it.... Tomorrow more greens!!
